It’s always nice to have a different version of a classic, and this is no exception. It’s lush and works well as breakfast, lunch or dinner. Allow about 15 minutes. For an alternative scrambled egg recipe with similar Indian flavours click on this link http://katielovescooking.wordpress.com/2013/06/02/most-excellent-masala-scrambled-eggs/ Both recipes are from Anjum Anand’s lovely book Indian Cooking Made Easy, which does exactly what it says.
I might go quiet for a little bit while I move house and attempt to catch up on some sleep (last night I was woken by both my boys, the oldest one complaining that he was ‘not batman’), but will be back with more exciting recipes soon…
Ingredients (serves 2)
Few handfuls cheddar cheese, grated
1/2 small onion, finely chopped (white or red is fine)
1 tomato, finely chopped
Small bunch fresh coriander, chopped
2 tsp red or green chillis, finely chopped
2 slices bread
Preheat the oven to 200 degrees/gas mark 6. Mix together all the ingredients except the bread. Divide it between the top of the two slices of bread. Cook in the oven for 8-10 mins until the bread is crisp and the cheese is browning. Serve with tomato ketchup.
