Fish finger sandwich with pesto and tartar sauce

This is a nice, lazy sandwich that consists of shop-bought fish fingers and basil pesto with homemade crunchy tartar sauce. Perfect for when you don’t have the energy to make anything that requires much effort! I think it would work best with crusty white bread, or toast, and with some salad or buttered asparagus on the side. Ingredients

Fish fingers (4 per sandwich)

Pesto (I bought Sacla basil pesto)

For the tartar sauce

Gherkins, finely chopped

Shallot or part of an onion, finely chopped

Capers, finely chopped

Mayonnaise

Cook the fish fingers according to the pack instructions. Combine all the tartar sauce ingredients in whatever quantity you like (approx 1 small gherkin, 1 teaspoon of capers, half a shallot and 2 teaspoons of mayo for two sandwiches). Spread some tartar sauce on one slice of bread, top with four fish fingers and another slice of bread spread with plenty of basil pesto. Serve with salad or buttered asparagus.
