It’s always nice to have a different version of a classic, and this is no exception. It’s lush and works well as breakfast, lunch or dinner. Allow about 15 minutes. Ingredients (serves 2)
Few handfuls cheddar cheese, grated
1/2 small onion, finely chopped (white or red is fine)
1 tomato, finely chopped
Small bunch fresh coriander, chopped
2 tsp red or green chillis, finely chopped
2 slices bread
Preheat the oven to 200 degrees/gas mark 6. Mix together all the ingredients except the bread. Divide it between the top of the two slices of bread. Cook in the oven for 8-10 mins until the bread is crisp and the cheese is browning. Serve with tomato ketchup.
